The name Santoku means “three virtues” in Japanese, as this versatile knife is ideal for chopping vegetables and fruits, slicing meat, and preparing fish.
Similar to the regular Santoku knife, the Bunka Santoku knife has a small blade with a flat profile, but the tip of the blade is shaped very differently.
Bunka knives are recognizable by their “reverse Tanto” profile, also known as “K-tip,” making them more precise than a classic round knife.
The Bunka Santoku can fulfill versatile functions and is the favorite go-to knife of many Japanese chefs.
In most fine dining establishments, only the head chef is allowed to use it, which is why the Bunka Santoku (a shorter version of the Kiritsuke) is often considered a symbol of expertise and status.
The knife is forged with Japanese 440C high-carbon stainless steel and stays sharp up to 10 times longer than other knives.
