These knives are made by Ishizuchi blacksmiths in the Tosa region of Japan.
This small team of blacksmiths follows the rich 400-year history of crafting sharp tools in the region.
These knives are a workhorse for both home and professional chefs.
They have great balance and feel, and feature the traditional rustic blue/black kurouchi or forge finish.
Due to their fantastic edge retention, toughness, and ease of sharpening, these knives are extremely popular among chefs in Japan and worldwide! The originally Japanese knife is also known as the Asian chef’s knife.
The name of the kitchen knife stands for ‘three virtues’ or ‘three qualities’, indicating that the knife can be used for cutting, chopping, and slicing fish, meat, and vegetables.
The name Santoku means “three virtues” in Japanese, as this versatile knife is ideal for chopping vegetables and fruits, slicing meat, and preparing fish.
