Binchotan is traditional charcoal from Japan.
It dates back to the Edo period, when during the Genroku era, a craftsman named Bitchu-ya Chozaemon began producing it in Tanabe, Wakayama.
The raw material is oak, specifically ubame oak, now the official tree of Wakayama Prefecture.
Binchotan is a type of charcoal or Hardwood charcoal.
The fineness and high quality of binchotan are attributed to the high-temperature carbonization process (around 1000 degrees Celsius).
Although it is often thought that binchotan burns hot, it actually burns at a lower temperature than regular charcoal but for a longer duration, making it preferred by some Japanese chefs.
Due to its smokeless and odorless properties, it is a favorite of unagi (freshwater eel) and yakitori (skewered chicken) chefs.
